I know it shouldn’t need to be on a list, but Kevin is usually the one who cooks dinner… So, I wanted to be able to treat him to a delicious rustic dinner. I made lamb (and cooking meat really grosses me out – so this was a big deal!) with a mint pan sauce, roasted brussel sprouts, and roasted acorn squash with brown sugar & butter. I have to say… It was a good meal! But, I really need to make it a more regular occurrence. My poor sweet husband!
